Cup Cakes
Now I know I am getting old when cup cakes are a hot bakery item. Yesteday my daughter-in-law made a batch of the delicious (high calories - 3 cups of confectioners sugar + 1/2 cup unsalted butter for the frosting alone) cupcakes. Needless to say they were delicious. I remember when cupcakes made from a box of cake mix + ready make frosting were a quick way to fullfill the birthday party in the classroom request. (Apparently due to the rise in obesity in children, children can no longer bring or consume treats in the classroom.) I did eat 2 of the delicious, high calorie little cakes. The last lonely cupcake is sitting on the counter calling me. I think that one cupcake calories count = 1 hour of spinning.
